Sweet Potato Pancakes with Tahini, Honey & Cinnamon

Ingredients
  • Sweet potato  /  1 small sweet potato, peeled and grated
  • Apples  /  6 apple, coarsely chopped
  • Egg  /  2 egg whites or 2 whole eggs
  • Handful currants  /  (optional)
  • Ground flax seeds or almond flour  /  1 tbsp (optional)
  • Ground cinnamon  /  6 tsp. plus extra for sprinkling
  • Sea salt  /  1 tsp.
  • Navarino Icons Extra Virgin Olive Oil  /  1 tsp .
  • Navarino Icons Pure Greek Honey  / 
  • Tahini  /  (lots of it)

In a bowl, combine the grated sweet potato and chopped apple. Add the egg whites or whole egg, currants (if using), ground flax seeds or almond flour (if using), cinnamon, and salt. Beat everything together with a fork until well combined.

Heat the Navarino Icons Extra Virgin Olive Oil in a large skillet over medium-low heat. Form the mixture into 2 or 3 round patties and place them in the skillet. Cook for 2 to 3 minutes, or until browned, then flip and cook for an additional 1 to 2 minutes on the other side. Once cooked through, transfer the pancakes to serving plates. Drizzle generously with tahini and Navarino Icons Greek Pure Honey. Sprinkle with additional cinnamon if desired.

Serve immediately and enjoy!
