Legume Salad with Balsamic Vinegar

Ingredients
  • Navarino Icons Extra Virgin Olive Oil  /  3 tbsp.
  • Navarino Icons White Balsamic Vinegar  /  1 tbsp.
  • Mixed Legumes  /  2 cups, boiled
  • Carrots  /  2, grated or chopped
  • Red Bell Pepper  /  1 large, chopped
  • Red Onion  /  1 large, chopped
  • Parsley  /  2 tbsp., chopped
  • Lime Juice  /  2 tbsp.
  • Lime Zest  /  1
  • Freshly Grated Ginger  /  1 tbsp.
  • Navarino Icons Pure Greek Honey  /  1 tsp.
  • Cumin  /  a pinch
  • Salt & Pepper  / 

Prepare the salad: In a large mixing bowl, combine the mixed boiled legumes, grated carrots, chopped red bell pepper, chopped onion, and chopped parsley. Add a pinch of salt and mix well.
Prepare the dressing: In a small bowl, whisk together Navarino Icons Extra Virgin Olive Oil, lime juice, lime zest, grated ginger, Navarino Icons Pure Greek Honey, Navarino Icons White Balsamic Vinegar, cumin, salt, and pepper until well combined.
Combine and serve: Pour the dressing over the salad and stir gently. Taste and adjust seasoning if necessary. Serve immediately, or let it sit for a while to allow the flavors to meld.
