Preheat the oven to 180°C
Prepare the Chicken:
Rub the chicken pieces with Navarino Icons Extra Virgin Olive Oil and minced garlic. Season generously with Navarino Icons Sea Salt Flower and freshly ground black pepper.
Place the seasoned chicken pieces in a large baking dish. Pour the white wine over the chicken. Cover the dish with foil and bake in the preheated oven for about 1 hour, or until the chicken is cooked through and tender.
Cook kritharaki (Orzo):
In a large pot, bring the chicken stock to a boil. Add the krithiraki (orzo) to the boiling stock and cook according to package instructions until al dente. Drain and set aside.
Prepare the Tomato Sauce:
In a small pan, heat the canned tomato sauce over medium heat. Season with salt and pepper to taste. Allow the sauce to simmer for about 10 minutes.
Once the chicken is cooked, remove it from the oven and shred the meat off the bones. In a large mixing bowl, combine the cooked orzo with the shredded chicken and tomato sauce. Mix well to combine.
Transfer the chicken and orzo mixture to a serving platter. Garnish with freshly grated Greek cheese and chopped parsley. Serve hot and enjoy !
